The vegetable we’re talking about is the mushroom! Officially, mushrooms aren’t vegetables, but part of the fungi family, but we often prepare them as vegetables. Apart from the popular white mushroom, there’s also the chestnut mushroom, portobello mushroom or the oyster mushroom, among others. Mushrooms are full of nutrients like vitamin B2, folic acid, potassium and fibres.

So, why shouldn’t you brush this vegetable? It’s because mushrooms soak up a lot of moisture and retain it like a sponge. When you’re pan frying them, this moisture will transform the taste of the mushrooms and make sure they’re much more limp and mushy in structure. It’s better to brush them clean to remove the dirt. Plus, it’s best to store them in the fridge, where they’ve got a shelf life of 2 to 3 days if you store them in a paper bag or a plastic container. Make sure you don’t store them together with onions or garlic, though, because mushrooms can take on the taste of these.
